  • 1 bay leaf
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sweet mustard
  • 100 milliliters vegetable oil
  • 1 tablespoon cornstarch
  • Sugar, salt, and pepper to taste
  • Vegetable oil (for frying)

Instructions

  1. Cook the Potatoes:
    • Boil the potatoes in their skins until tender. Drain and let them cool completely.
    • Peel the cooled potatoes and cut them into bite-sized pieces.
  2. Prepare the Dressing:
    • Finely chop the onions and parsley.
    • In a small bowl, whisk together the white wine vinegar, vegetable broth, Dijon mustard, sweet mustard, and cornstarch until smooth.
  3. Assemble the Salad:
    • Heat a little vegetable oil in a pan and sauté the chopped onions until translucent.
    • Add the bay leaf and continue cooking for a minute.

    • Remove the bay leaf.
